Il Pane dei F.lli Bertoldi
With Filippo Broll, Emanuele & Mirco Paoli
Started in 2019, still in progress
This ongoing documentary delves into the world of Rino and Luciano, two brothers who have dedicated their lives to crafting some of the finest bread in the valley. Their bakery, a relic of the 1980s in both style and spirit, stands as a beloved cornerstone of the community. Initiated in late 2019, the project faced an unexpected pause due to the lockdown. However, the research remains active, and there is potential for its completion in the near future.
Rino’s bread is legendary—praised for its perfect balance of a crisp, golden crust and a tender, airy interior. The variety on offer is both traditional and distinctive: from the iconic “spaccate” and “tartarughe” to the cherished “filoni,” which he insists must never be mistaken for “pan francese” or “French bread.” These loaves remain fresh and flavorful even the next day—a testament to the artisanship and care behind each batch.
Local lore whispers of a secret ingredient, a guarded family tradition that Rino and Luciano keep close to their hearts. While the exact recipe remains a mystery, the impact of their bread on the village is unmistakable. It’s more than sustenance; it’s a cultural emblem that binds the community together.
Through intimate interviews, this documentary is meant to capture the voices of Sant’Orsola Terme’s residents, who share their favorite breads, childhood memories, and personal stories intertwined with the bakery. Though still a work in progress, this film offers a glimpse into a world where every loaf tells a story of heritage, craftsmanship, and community.
